There is no way I can fully prepare anybody (novice) HOW to smoke meats.... BUT:

You may be able to find the BOOK cheaper at other websites; but I give sausagemaker.com company TWO THUMBS UP for their products and Customer Service!. Over the years I have spent thousands of dollars buying spices, sausage casings, equipment and 'stuff' from them and have never been disappointed.

Now; IN THE BOOK:

There is a section specifically about SMOKING MEATS. It has some very important information in there you definatley should read before venturing into the art!

Other chapters in the book are interesting STOOL READING... the guy (RIP) was a genius!

I visited the site and note the following in their description of the book:

They cure meat in Australia? How do they know it is sick and needs curing?

The only thing ausholes do with meat is beat it. Like Michael Jackson.
